Tomatoes and miso are rich in umami ingredients

Tomatoes and miso, the main ingredients of ketchup, are rich in glutamic acid, which is a flavor component. This is why adding a little ketchup as a secret ingredient adds depth to the flavor of regular miso soup.

There are other umami ingredients, and it is said that using inosinic acid from bonito flakes and guanylic acid from shiitake mushrooms together can enhance the umami flavor.
