In Fukuoka, the well-known tonkotsu kingdom, one of the rare restaurants that specializes in miso ramen is Hakata Bunpuku in Kasuga City. The owner, Tomoaki Shimazu, who has extensive overseas experience, having trained at Hakata Ippudo and was in charge of IPPUDO NY for over seven years, says, “Fermented foods, which are Japan’s world-class asset, I especially want to master miso,” so he returned to his hometown of Fukuoka and opened the restaurant in December 2021. After much trial and error, Mr. Shimazu arrived at the miso sauce, which is a blend of about five types of miso, mainly from Kyushu, including rice, wheat, and country miso. Re-brewed soy sauce and other ingredients are kneaded and aged, and they are carefully dissolved in a bowl into a double soup of meat and seafood stock, without being cooked, to bring out the malt and freshness of the miso. en you drink the soup, you can feel the deep mellowness of the miso, and the firm “dashi flavor” of knotweed. Miso x cheese. en you hear about this combination, you might think, “These mellow things definitely go well together,” but when you try it, it goes far beyond your imagination. This is a masterpiece of “cheese in miso ramen” made with carefully selected ingredients and a carefully calculated balance.

First, let’s look at the specs of miso, which is the key to the flavor, and the base soup. As mentioned above, “Hakata Bunpuku” is a double soup of meat (pork bones, chicken bones) and seafood soup stock, blended with five types of miso. For this limited edition noodle, we have thoroughly focused on “matching with cheese” and have brewed a new miso sauce with a strong sweetness that is a strong blend of barley miso from Fukuoka Prefecture. For the homemade noodles, we have newly designed thick noodles that are easy to lift the cheese and soup. And for the cheese sprinkled like snow at the end, Parmesan cheese from the Netherlands is used. The moment the bowl is brought to the table, you can smell the rich miso and cheese flavor. As the soup heats up, the cheese gradually melts and coats the noodles, making them stretchy when you hold them with chopsticks. The refreshing sweetness of the miso, mainly produced in Fukuoka Prefecture, the strength of the meat-based soup, the richness of the seafood stock, and the mildness of the cheese all come together in a harmonious way.
