●The popular restaurant “Sumire”, which opened when “Ramen Museum” opened in 1994, is back.

Shin-Yokohama Ramen Museum, a very popular ramen amusement park in Yokohama City, Kanagawa Prefecture, is known as a “sacred place” among ramen lovers and is celebrating its 30th anniversary since opening. About 40 famous stores that have opened in the past are open for a limited time. We are developing a special project called “Famous Store Series” where we will re-open that famous store.

“Sumire” was founded in 1964 by Akiko Muranaka on Nakanoshima, Sapporo City, and is a uniquely developed “rich-style” ramen that stands out from the miso ramen that was sweeping Sapporo at the time. In 1981, after a one-year hiatus, the business resumed business using the established name “Junren”, keeping the kanji in the shop name the same. After that, Akiko’s eldest son, Mr. Noriai, succeeded Akiko in 1986 in Minami-ku, Sapporo City, and started “Junren”, and in 1989, her third son, Nobunobu, moved to the founding place of Sapporo. The store opened at “Rahaku” for a long period of about 19 years, including about 10 years from 1994 to 2016, and about 9 years from 2009 to 2030. Sapporo Miso Ramen has been with Rahaku for about two-thirds of its history, celebrating its 30th anniversary this year, and has continued to gain support from customers for a long time. It can be said that this store deserves to be called a famous store, including its achievements in further enhancing its reputation.

The miso ramen served at this year’s “Rahaku” recreates the flavor from 1994, when it was richer than the current one. Mr. Nobuyoshi Muranaka, who became the general owner of “Sumire”, formed “Sumire All Stars” with 12 of his skilled apprentices who are currently running their own stores. Mr. Nobuyoshi will be in the kitchen all day during the event, and his disciples will be in the kitchen every two to three days, creating the rich miso ramen that is the origin of Sumire.

The rich miso soup is made by heating raw miso in a wok, then frying ground meat, garlic, onions, and bean sprouts at a high temperature, then adding soup made from tonkotsu, seafood, and vegetables. The noodles are aged, thick and curly. The firmness and elasticity, the taste of the noodles themselves, and the unique chewy texture make them a perfect match, without being overpowered by the strong flavor of miso soup. In addition to the ground meat and vegetables that go into the soup, the ingredients include two types of pork fillet, menma, chopped green onions, and fresh ginger rubbed on a grater, which is sprinkled on just before serving.
