Menya Ao AOI (Tsukuba City), a famous rich miso shop representing Ibaraki, has created a cup perfect for the cold winter. As part of the “15th Anniversary Memorial Noodles” project of “Ramen Walker Ibaraki 2024” (now on sale), the taste of Ibaraki’s winter will be made into rich miso ramen!

Ibaraki is a treasure trove of seafood. Monkfish is one of the most famous winter delicacies. The juicy flesh is also delicious, but the liver is especially popular. In winter, the temperature of the sea water drops, which causes the livers of monkfish to enlarge, become fatty, and have a deeper flavor. “Dobujiru”, a hotpot dish made by dissolving the liver of apricots in soup, has become a representative local dish of Ibaraki. This time, “Menya Aoi AOI” will be presenting a rich miso ramen that uses plenty of apricot liver.

The base of the soup is the restaurant’s signature rich pork bone seafood. Pork bones, chicken bones, and other ingredients are cooked for three days and combined with seafood such as dried fish and dried sardines, making it rich in flavor. In this soup, a matured miso sauce made mainly from white miso from Shinshu, and apricot liver are luxuriously dissolved. It’s thick, rich, and creamy. There is no fishy smell at all, and it has a slightly sweet taste that lingers.

The main ingredient is steamed pork liver. It has a moist and rich flavor, accented by the refreshing sensation of the skin of Fukurai mandarin oranges from Tsukuba. Of course it’s delicious to eat as is, but you can also dissolve it in soup to make a richer soup. Other ingredients such as mizuna, carrots, shiitake mushrooms, and chashu pork are also added to add color to the rice bowl.

And don’t miss the noodles. These homemade noodles are made exclusively for premium noodles, and are distinctive for their brownish color. Its true identity is shiitake mushrooms, which are kneaded into the noodles. Shiitake mushrooms are rich in guanylic acid, an umami ingredient, which enhances the flavor of an liver miso soup. The thick noodles have a chewy and strong texture that clings well to the thick soup, and the more you chew, the more delicious the miso and noodles become. If you have the stomach, we recommend ordering the risotto set (sold separately for 220 yen) and enjoying all of the soup.

The owner, Shingo Koseki.He also runs a noodle making factory and sells to popular stores in the prefecture.

The owner, Shingo Koseki, studied ramen on his own and founded Menya Muso in 2008 in Shibasaki, Tsukuba City. The restaurant quickly became popular for its light Chinese noodles and rich pork bone and seafood tsukemen (closed in 2017).

“Menya Ao AOI” was launched in 2010 as a second brand. This restaurant’s signature menu is rich miso ramen, which is based on a rich pork bone and seafood soup, and is supported as one of the prefecture’s most famous miso restaurants.
